Infamous Bytes is a cooking app built by a chef, for anyone who cooks.
The founder
Taj Martinez
Taj started working in kitchens around 19 — kitchens by day, barback and security at a bar at night, plus the janitor shift cleaning after hours. Some days ran 20 hours between the jobs. Then he realized the kitchen was the one.
Over 18 years in professional kitchens — hotels, a casino, and small local restaurants — he worked his way up to Sous Chef, Banquet Executive Chef, and Executive Chef. In banquet kitchens he ran events of 120 to 250 plates, scheduled as close as 30 minutes apart, on days that turned 600, 700, 900, even 1,700 meals. To this day he still does large-batch cooking with chicken-scratch math by hand. That math is what the Infamous Bytes calculator and Event Sheet are built to do.

The app bridges the two worlds of cooking. Home cooks get a real taste of the industry, and the industry gets taught a thing or two by a fierce home cook.
The app is a tool, not a replacement. It does the math and the busywork so you can be the best at what you do. The judgment stays with the cook, always.
